Tasting notes

The nose reveals floral and red fruit aromas such as raspberry. There are also hints of pepper and mint. On the palate, there’s a complex range of aromas, full of finesse, with a saline edge. Lovely freshness. A wine of great elegance and complexity. Long finish.

Vineyard size: 31.8 hectares
Soil composition: Clay-limestone plateau with South/South-West exposure.

Winemaking

Fermentation container: Plot vinification, in temperature-controlled stainless steel vats, gravity vatting.
Maceration technique: 2 week vatting time with pumping over twice a day
Aging: Oak Barrels
16 to 18 months with 50% new oak including 3 casks.

Domaine

Château Canon, facing the Saint-Emilion bell tower. The surrounding vineyard, on the outstanding terroir atop a limestone plateau. Belonging to the Chanel group since 1996 and currently undergoing their organic conversion, to be finalized in 2024.
