Tasting notes

A dark ruby color with density of color. On the nose, a pleasing profile that has black cherry and a hint of rose with a remanence of chocolate. Tannins are soft yet have good volume.

Vineyard size: 24 hectares
Soil composition: Clay-limestone plateau with South/ South-West exposure

Winemaking

Fermentation container: Oak vats with temperature control
Maceration technique: 2 week vatting time with pumping over twice a day
Aging: Oak Barrels
18 months with 60% new barrels – Racking by candle light every 3 months.

Château Canon, facing the Saint-Emillion bell tower. The surrounding vineyard, on the outstanding terroir atop a limestone plateau. Belonging to the Chanel group since 1996 and currently undergoing their organic conversion, to be finalized in 2024.
