Tasting notes

Beautiful nose, fine and attractive. Ample fleshy structure of red fruits on fine, spicy and mineral notes very typical of this terroir. Longue finish, fruity and elegant. Very good balance.

Vineyard

Vineyard size: 50 hectares
Soil composition: Mixed gravel surface with a clay-gravel subsoil.

Winemaking

Fermentation container: Three vats (stainless steel vats, concrete tulip vats wooden vats).
Maceration technique: 3 week vatting time.
Aging: Oak Barrels
14 months in oak barrels, one third of which are renewed each year.

Heritage in the vineyard

Domaine

Dating back to the 17th century, when the domaine was referred to Chivaley. Domaine de Chevalier would be linked to the Saint-Jacques de Compostela path that borders the edge of the estate. In 1983, Olivier Bernard would take control of the estate, bringing it to new heights.

Environmental practices

A vineyard run according to sustainable agriculture, the objective being to optimize economic performance by controlling inputs, to limit their environmental impacts. Additionally, half the estate is conducted using organic practices, with the idea to slowly convert the entire estate.
